Guests will get to know the Mayan culture by the unique culinary
experiences at the resor t. The organic and seasonal cuisine comes
mainly from the hotel’s traditional Mayan gardens. Chablé’s culinary
offering was designed by acclaimed chef Jorge Vallejo whos restaurant
Quintonil in Mexico City has been recognized several times within “The
World’s 50 best Restaurants”.

The accommodations at this proper ty f ind their natural place around an
old wall or a local tree, respecting all existing vegetation. The stone walls
recreate old walls, called albarradas, and are the pretex t to create the
space in which the hammocks and private pools are located. Bathrooms
