May/June/July 2024 Old Naples News | 15 SWEET AND SPICY THAI CHILI SAUCE 1 Can Thai Coconut Milk ( Chilled) 1 Btl. May Ploy Sweet Chili Sauce 1 Btl. of Thai Fish Sauce ½ tsp. chopped garlic ½ tsp. Galangal (Thai Ginger) or regular Ginger ½ tsp. Thai Basil Leaves (or other fresh Basil) Lime Juice 2 Lime Leaves Extras to make yours unique and personalized: Can of Red Curry Paste, or Masaman Curry Paste 2 Kaffir Lime Leaves ½ tsp. Fresh Tumeric ½ tsp. Sambal Oelek chili paste 1 tsp. Chopped Lemon Grass 1 tsp. Cilantro 2 tsp. Chopped Scallions or Chives Bring to a boil and then simmer Open the can of Coconut Milk carefully, not to invert or shake up. Scoop up the thick layer on top and put it in a saucepan. Add lime leaves, garlic and galangal. You may add other ingredients like Tumeric, Curry Paste or Lemongrass etc. at this time. Simmer for 5 minutes. This sautés the ingredients and flavors into the Coconut Mik Fat. Add the rest of the Can of coconut milk and cook down by ½ in volume. Add 2x the volume of coconut milk mixture of Thai Chili Sauce as well as 2 tsp. of Thai Fish Sauce. Simmer until thickened. The Fish sauce adds Umami to the sauce and it MUST be cooked in that final simmer to get the proper flavors. Keep warm. Just before serving add chopped Basil and top with crushed Peanuts. Tabasco 1 tsp. minced Shallot 1 Egg Yolk 1 tbsp. chopped Flat Leaf Parsley 1 tsp. Old Bay seasoning ½ cup crushed Ritz crackers Preparation Mix all wet ingredients together with a whisk FOLD in Jumbo lump Crab and mix softly until coated. Try not to break up the lumps of crab. Fold in Ritz Crackers. Portion to desired size. Griddle in pan with grape seed oil and 1 tsp. unsalted butter. Corn Aioli 1 cup Dukes Mayonnaise 1 cup roasted corn kernels 1 tbsp. Lemon juice 1 tbsp. Chives 1 tbsp. Capers 1 each Anchovy filet 1 tsp. sea salt Pinch white pepper Preparation Put all ingredients in a food processor and pulse blend until sauce is chunky and capers are broken. As much as we love Southwest Florida’s summers, by now we are really feeling the heat and while I am a big proponent of the very mild AC cooling (75-76°F), sometimes you just must chill a bit more. So, here are some useful holistic tips you can use this summer for AC-less heat relief. 1. GET FRIENDLY WITH ALOE VERA Most people only reach for aloe vera when they are totally sunburnt. However, research found that smoothing it on preemptively when you are starting to just feel overheated will yield great results. Aloe vera cream will lower skin and subdermal temperature on contact by as much as five degrees Fahrenheit. Additionally, studies found that aloe penetrates the skin four times faster than water and reaches seven layers deep (while water reaches only the outer layer), so the cooling effect will last longer than taking a cold shower. 2. STICK WITH BLUE COLORS We generally think of white color as the most light-reflective. Perhaps that is why spicy foods are so popular in tropical climates. Conversely, reaching for something like a bowl of ice cream, which is classically thought of as a summer treat – will cause a spike in sugar, forcing your metabolism to speed up to absorb it, and thus causing a spike in body temperature. So, make sure to add the following cooling spices to your DR. KEEP A BEAUTIFUL INDOOR PLANT COLLECTION According to USDA estimates, a room full of indoor plants can lower air temperature by as much as 10 degrees Fahrenheit. The reason: plants go through a process called transpiration, in which they absorb warming carbon dioxide from the air and emit cooling water vapor. Even placing just a few potted plants in sunny rooms can lower the temperature by up to three degrees Fahrenheit. Interestingly, desert plants that are used to offset arid conditions conserve water during sunny hours and only transpire at night, so keep cacti or other desert plants in your bedroom. 5. FOOL YOURSELF COOL WITH MINT Scientists have long isolated a protein called TRPM8 responsible for making humans feel cold. It turns out that menthol also triggers our inborn TRPM8 receptors, triggering a cold feeling. So, if you are feeling hot, chew a stick of peppermint gum or spray on some cologne with mint in it, or rub on some mint-scented lotion to fool your brain into sending cooling signals to your skin.

24 | Old Naples News May/June/July 2024 CHAD OLIVER Chief Communication Officer Collier County Public Schools NEW HOUSING SURVEY REVEALS REALITIES Access to housing and the overall cost of living have long been issues in Collier County, but not to this extent. Collier County Public Schools (CCPS) now has survey data to prove the importance of the issue. For two weeks in March, we shared an anonymous survey with all District employees, instructional and noninstructional. Approximately 3,500 CCPS employees took time to complete it. WHERE CCPS STAFF LIVES Eighty-one percent of our survey respondents live in Collier County and 18% drive into a CCPS work site from Lee County. The remaining one percent live in other counties, and several drive from Florida’s east coast each day. When asked about their current situation, 65% own their home, while 25% rent and are at the mercy of rental spikes seen statewide since the pandemic. According to the apartment search engine Rent.com, the average monthly price for a one-bedroom in Naples is $1,910, and $2,350 for a two-bedroom. Hard to believe those prices have gone down year-to-year! Our survey revealed 275 of our staff have a stable place to live; however, it is with family or friends. For those that told us they do not have a stable place to live and provided their contact information, we are connecting them with potential community resources to assist. FEELINGS ABOUT THE FUTURE The survey revealed the issue of housing is top of mind for many who work in our public schools. Forty-five percent said they are concerned they will not have stable housing within the next year, and 80% of those respondents cited “cost” as the reason. Of the 3,500 district staff who took our survey, nearly two out of three expressed concern that the current costs of housing might force them to seek employment elsewhere in the future. RETAINING, RECRUITING, AND ADVOCATING Superintendent Dr. Leslie Ricciardelli explained to staff why their input was important. “Our school district has been asked to join the collaboration and conversation around providing solutions for essential housing... The information gathered from this survey will help provide a clearer reflection of our employees’ current housing situation.” CCPS Chief Human Resources Officer Valerie Wenrich shared the results of the CCPS Housing Survey during the public comment portion of the March 26, 2024, Board of County Commissioners meeting, where they voted to advance the development of essential housing at the former Golden Gate Golf Course. CCPS understands the concerns of our employees and is doing everything in our power to retain and recruit employees. This past year, the School Board passed a record increase for teacher compensation, representing a $26 million increase in salary expenses. Additionally, the School Board put out a request for proposals for essential housing development of 35 acres, owned by CCPS, adjacent to Manatee Elementary off U.S. 41. Results from the employee survey will help inform the next steps for the School Board on how that property may be used. Part of the school district’s role is to be both a collaborator and a connector. To that end, we maintain a housing webpage (collierschools.com/housing) for our staff to share opportunities from outside organizations, provide housing resources, and potential assistance. Housing is essential for our community providing public services, for our school district to continue to be an A-rated educational provider, and for sustaining the overall quality of life that makes Collier so desirable. Housed in a four-story mansion built in the style of a Venetian palazzo, its collection of art was carefully curated and displayed by a woman whose passion for art was unparalleled by her peers. Isabella Stewart Garner made it her life’s work to create this love story for the arts. Born in 1840 in New York, Isabella Stewart was one of four children of David and Adelia Stewart. Her father was an up-and-coming linen merchant with great wealth, and she lived a privileged childhood. When she was 15 the family moved to Paris partly so Isabella could attend a finishing school for American girls. During her time there she became friends with Julia Gardner, the child of a wealthy Boston Brahmin family. This connection led to her eventual marriage to John “Jack” Lowell Gardner. A bright and vivacious woman, Isabella was not well accepted by the insular and proper Boston society. Despite this, her greatest tragedy was losing her son to illness when he was almost two. Unable to have more children, she spent the rest of her life trying to find an outlet for her unspent love. Fortunately, their great wealth allowed the couple to travel extensively, which they did. First across Europe, and later to Egypt, Japan, China, and India. Everywhere they went Isabella threw herself with full force into her curiosity for different cultures and artistic traditions. At first, she collected memories in scrapbooks but began to dabble in real art collecting the further afield they went. By the waning years of the nineteenth century, she had enough art to create her very own museum. After the sudden death of Jack Gardner in 1898, Isabella took matters into her own hands. Building her mansion at 25 Evans Way, she created a space large enough to house the collection of art the couple had accumulated over two decades of travel. The museum opened in 1903 and to this day has not changed the installation of anything Isabella had so carefully put together. Natalie Dysktra’s new book is carefully researched and written in a narrative that is at once engaging and lush with detail. Isabella’s life, at times tragic and others enviable, is a brilliant testament to the will of the spirit. Dykstra was awarded the 2018 Public Scholar Award from the National Endowment for the Humanities to support her research for this book. She traveled extensively and gathered many impressions that she wanted to share not only with words. Tatiana then decided to go “back to school” and become a professional artist. Currently residing in London, UK, Tatiana’s paintings are in private collections in Ukraine, Russia, the UK, USA, Canada, France, Germany, Austria, Japan, Taiwan, Israel, and Australia.

Better Together helps parents who are going through a hard time to keep their kids out of foster care, find work and address the root causes of their struggle so that they can reunite as a family with the tools and support system to thrive. With the help of donors and hundreds of volunteers and church communities, Better Together builds lasting support systems that help families cope with hardships – such as job loss, substance abuse, homelessness, and jail time – and ensures that children are cared for in a safe home until the family can be reunited. 38 | Old Naples News May/June/July 2024 BAKER SENIOR CENTER NAPLES MARKS MILESTONES IN CONNECTING OLD ADULTS Baker Senior Center Naples, a nonprofit organization that serves as the leading advocate for older adults in our community, is celebrating not one but two milestones during 2024. This year marks the 10th anniversary of when the senior center officially opened its doors, welcoming local seniors with a wide range of social activities aimed at combatting loneliness and isolation. The organization also is celebrating the oneyear anniversary of when it moved into its new, 30,000-square-foot permanent home located in North Naples. Originally founded as Naples Senior Center, Baker Senior Center Naples opened its doors on January 22, 2014 as the first senior center in Collier County. Located in a small rented space on Castello Drive, the senior center initially offered social programs and activities to just 80 initial seniors. Membership has since expanded to over 2,600. “When we first started, no one could have imagined the surge in the depth and scope of need for comprehensive senior services in this region. At the same time, there was little assistance available for older adults,” said Dr. Jaclynn Faffer, President/ CEO of Baker Senior Center Naples. “We are thrilled to observe both milestones and look forward to further providing confidence, connection and support to all seniors in our community.” Since its inception, Baker Senior Center Naples has evolved into the only human services agency of its kind, providing comprehensive “one-stop shop” services addressing the emotional and social needs of all adults over age 60 on Collier and southern Lee counties. All programs and services are provided by licensed and credentialed professionals. These include the Brookdale Cognitive Health Services, including Dementia Respite Groups and Caregiver Support; Geriatric Case Management and Senior Outreach Programs; and Mental Health Counseling as well as a “choice” Food Pantry. An average of 40 different social, educational and wellness programs also are offered each week thanks to a dedicated corps of over 200 trained and vetted volunteers. Among these programs are classes in art, music and film; brain fitness and educational seminars; courses in technology/computer science; physical well-being; and interest groups. In recent years, Baker Senior Center Naples has remained at the public forefront as a champion for local seniors. During the global pandemic, for example, the organization partnered with the Florida Department of Health in helping over 7,500 seniors get vaccinated against Covid-19. Many of these seniors lacked the technology needed to book an appointment with the state and had trouble obtaining the life-saving vaccine.


May/June/July 2024 Old Naples News | 39 Once it became known that Baker Senior Center Naples was securing appointments for seniors, gated communities, civic groups and hospitals began referring seniors, and when the number of incoming calls exceeded capacity, the center added phone lines so staff and volunteers could help every older adult in the community who wanted it. The center also contracted with a home health care company to provide transportation when needed. More recently, Baker Senior Center Naples partnered with the Collier Community Foundation to help seniors in the recovery process after the devastation of Hurricane Ian. Older adults were especially hit hard by the September 2022 hurricane with limited financial resources or family members to assist them. Senior center staff and leadership worked with local seniors and connected them with the community resources they needed to rebuild their lives, particularly those living in lowincome areas of Collier County. Through the years, the senior center has experienced tremendous growth in the number of programs offered. To accommodate this and future growth, a new building has been built. Located at 6200 Autumn Oaks Lane, the new Baker Senior Center Naples replaces the formerly leased facilities that the organization had outgrown due to the region’s surging senior population. The new state-of-the-art building provides additional space for new and enhanced social services and activities for adults over the age of 60. The project was funded through a capital campaign that was launched in 2019 and was accelerated by a $11-million commitment from local philanthropists Patty and Jay Baker. STILL GOING STRONG AFTER 20 YEARS Fitness Together (FT) in downtown Naples celebrates its 20th anniversary! FT has indeed been the “Premiere Fitness Studio” in downtown Naples since signing their lease in December, 2003. Located at 335 14th Avenue South for all these years, they have been called the “cheers without the alcohol,” “the icing on the cake,” assisting thousands of people along the way. They take pride in every detail of their studio. Upon arriving in Naples from the east coast of Florida, Paula Allia and Annette Suridis wanted to make a positive impact on the health and wellness of the city's residents and visitors. It was important to them to have a facility that was not large and impersonal, nor one that was small with a large area. With one-on-one sessions in private rooms with similar equipment, clients could have privacy along with the trainer's full attention without interruptions, ensuring that goals would be reached and work could be done without interruptions. The only area shared is the cardio room where many long-lasting friendships have been made. Both Allia and Suridis wanted to provide the best care possible to their clients. Having already worked in their fields for over twenty years, both felt that by providing the right atmosphere and having the right knowledge of anatomy, biomechanics, physiology, and exercise, they could indeed make a positive impact in their client's day-to-day lives. Responses from clients regarding FT are exceptional. There is a special touch and feel to the studio, starting with the welcome towel and beverage upon entering the door to the departure once completing a workout session. Apples are gleaming, and bananas are perfectly ripe. Clients often continue their training virtually over the summers so that upon returning they continue to progress rather than fall behind. A larger space was available to FT, but the decision to remain a four-room studio to maintain personalized service took precedence. Making clients feel special and adapting programs to meet individual needs by accommodating to age specific, medical and orthopedic issues is the key!" It is common for clients to not know exactly what they need when they enter FT. If there is uncertainty regarding fitness and movement goals, a trained professional can help. 42 | Old Naples News May/June/July 2024 The Miracle Mile project is a resident-led initiative started a year ago after the destruction of Hurricane Ian. It is a collaboration of residents and developers along the boulevard, Lowdermilk Park, neighborhood community associations, the Edgewater Hotel, and the Naples Beach Club, the future home of the Four Seasons Hotel. It is the stretch of Gulf Shore Boulevard North (GSBN) that runs from the Naples Beach Club to the Mooring Line Drive Bridge. This stretch of GSBN serves as a gateway to the entire city where many residents and tourists bike and walk along our beautiful beaches. The mission of the Miracle Mile project is to engage stakeholders in a collaborative approach to redevelop a key area in the city in a thoughtful and coordinated manner. The plan is to create and implement a streetscape that includes the following: 1. Retains and builds upon the unique character of Naples. 2. Implements improvements to resiliency/stormwater and underground utilities while remaining environmentally responsible. 3. Creates a cohesive and beautiful landscape in the public realm that residents value while enhancing the neighborhood and city. In case you missed the Naples Daily News articles and WINK News stories on the Miracle Mile project, on February 7 at the regular city council meeting over 140 Miracle Mile residents and all 38 developments on the Miracle Mile were represented. The Coquina Sands and the Moorings residents made their presence very clear that they are fully engaged about what is going to happen to the boulevard in their neighborhood. The decision was made that day for the approval of the funding for consultants, Agnoli, Barber & Brundage recently purchased by LJA, which is another fullservice local engineering consultancy firm, to move forward. LJA’s task is to create a conceptual master plan for the above-ground streetscape on the public right of way. The committee has already started meeting with the consultant and looks forward to sharing their progress thus far with residents. Right now, the consultant is working on developing a right-of-way base map of the boulevard and creating the Naples Miracle Mile website. A big part of our project is community engagement. We want to hear from our residents. The committee completed a survey last summer that was emailed out to residents by the Gulf Shore Property Owners, Moorings, and Coquina Sands Associations. There were 864 responses. Residents were asked what features are most important to them along the Miracle Mile. MORE THAN 90% OF RESIDENTS RANKED THE FOLLOWING AS THE TEN MOST IMPORTANT FEATURES: • underground utilities • sidewalks • traffic density • low building heights • green space • lush landscaping on private property • stormwater flooding on the road • views to the gulf and bay • building setbacks • pedestrian crosswalks • green space • verdant landscaping on public property The committee has met with residents and presented at neighborhood association meetings several times over the last year. They also plan on doing another survey in the future as well as creating additional in-person opportunities for residents to provide us with their further input about how they envision the future of the Miracle Mile. The reason why this neighborhood project has been so successful thus far is that all the stakeholders have been collaborative. Current long-time residents, developers, future residents of these new luxury developments, the city of Naples, and the many tourists that will visit our two hotels will all benefit from a more structurally sound, safer, and aesthetically cohesive Miracle Mile. 50 | Old Naples News May/June/July 2024 One of the biggest thrills of my job is developing confidence in children and watching as they progress through life. Sometimes it’s the little things, like a photo, that remind us how far we have come. This spring, 56 children, from various elementary and middle schools, capped off twelve weeks of musical theater training at Naples Performing Arts Center (NPAC) with four performances of Beauty and the Beast Jr. Photos from proud parents circulated on social media and one caught my eye. It showed three current sixth graders—Celie Dockweiler, Aniston Gerry, and Ruthie Grossman—on stage together from NPAC’s production of Beauty and the Beast Jr. in 2016. From Pre-K to pre-teens, I marvel at how they have grown! When I asked each of the three families to explain what NPAC has meant to them, one common theme appeared: instilling confidence. “Each [musical] that Celie has performed in truly teaches a lesson, not only in the script but also from positive feedback, collaboration, and support from her teachers, directors, and peers,” explained Heather Dockweiler, who uses Instagram to archive her daughter’s experiences at NPAC. Another of our longtime supporters added, “Over the years, Aniston has gone from a quiet, timid, and shy girl, to trying out for lead roles,” Ashley Gerry wrote to me. “You nurture their confidence to believe in themselves. You make it your mission to foster self-love and confidence as well as supporting and showing kindness to others. I am so grateful to have had NPAC as a part of her life while growing into a well-rounded, self-assured child.” “If you love what you are doing, don’t stop,” said sixth grader Ruthie Grossman. “It doesn’t matter what role you have, it’s so fun to be a part of. Never give up on your dreams!” Our education spaces for private and group instruction take place at the YMCA of Collier County. One mile away at the Community School of Naples is where our large musical theater performances take place. We welcome anyone in the community to volunteer, purchase tickets to see these amazingly talented students shine on stage, and donate to NPAC so more students may participate in the arts and develop life skills. Since I founded NPAC in 2012, we have grown to become the place parents turn to for performing arts education. Musical theater education, from elementary through high school age, is our forte with cast lists routinely topping fifty students; however, it’s not about the numbers, and it’s certainly not just about shows. NPAC’s core mission fosters creativity, builds self-esteem, and develops a love for the arts. We are here to be an extended ‘family’ as evidenced by the three girls who have come full circle with me in Beauty and the Beast Jr. Be our guest and see the impact yourself.
