He could never have imagined that one day he'd own that restaurant. Or that 32 years later, Bistro 821 would remain the longest running restaurant on Fifth Avenue South. FINDING MY PASSION\"My father, a scientist, had hoped that I'd follow in his distinguished footsteps. But I was working several jobs, kicking around for a direction, and failing horribly. One day, I was washing dishes in a restaurant on Cape Cod, when a cook didn't show up, and I got pulled into the line. It was one of the most thrilling days of my life. I went home that night with the clearest insight I'd ever had. Finally, I knew what I wanted to do. From then on, I worked in every restaurant capacity, absorbing everything. And then serendipity happened. Famed chefs Julia Child and Jacques Pépin created a culinary arts program at Boston University, and I was chosen for the first class. They both gave demonstrations and we students were their slaves. One day we were invited to Julia's home, and in case you're wondering, everything you've heard about her knife collection is true! Our final exam was brutal. Jacques was one of the judges and he purposely set us up to fail, leaving out critical ingredients. I made hollandaise five different ways. I deboned a turkey, roasted it and put it back together perfectly. But when I made my fruit tarts with half and half instead of pure cream, he knew!\"Did you still pass the exam? \"I was number one!\"CONSISTENCY IS NEXT TO GODLINESS\"Several takeaways from Jacques' class have helped defined me as a chef. Once, he took a box of kosher salt and poured a little mound, and beside it, another mound, and then another one. I'm staring in disbelief at KAREN T. BARTLETTthat row of salt piles, all precisely the same. 'A good chef must be able to do this,' he says. 'You must understand and respect the seasoning.'That's a challenge in the corporate restaurant environment, where cost and convenience often get in the way. There's the assumption that partly substituting a lower grade of oil won't make much of a difference. It does. Also, everything must be fresh. To this day, an ingredient not up to the highest standard does not come through my door. Introducing specials keeps me creative; keeps the thrill of cooking. But at Bistro 821, only favorites join the permanent menu. Our now-legendary miso-sake marinated Chilean sea bass took six years to earn its spot and remains a top seller.\"THE PHONE CALL THAT CHANGED EVERYTHING\"After completing the culinary program, I got a call from a friend who was the chef at Windstar Country Club in Naples. 'Come to Florida,' he said, 'and be my sous chef.' My wife and I fell instantly in love with this town. But I missed the restaurant kitchen experience, and soon got a job at Michaels Cafe on 41, working alongside another sous chef, Jimmy Ryan. Both Michael and Jimmy were to remain part of my life for over the next 30 years.\"When Michael decided to open a restaurant on Fifth Avenue South, he recruited the best chef he knew, his own sous chef at Michael's, to lead the kitchen. Many say that the selection of Jesse Housman was his most lasting accomplishment.PERSONAL TRAGEDY\"Those early days were exhilarating. I'd spend all day at the construction site, clean up, and rush back to my job at Michael's. After we opened, my wife worked beside me, supporting my dream. I was the best version of me. A few years later I would lose her in a tragic accident. My world was ending. I could have taken our fiveyear-old daughter back to Boston, moved in with her grandmother, and been sad the rest of my life. But our tight knit community saved me. Naples was a small town then, and a tragedy was communitywide. My friends gave a benefit dinner at the Turtle Club, raising enough money to help us through. Years later, I was blessed to find another wonderful woman, Larissa, and life is good.\"Do friends feel nervous having you over for dinner? \"Of course, people are a bit nervous, and that's a shame, because I love home cooking. Joy to me is a small family group, with all the emotion that goes with preparing and enjoying food together.\"WHAT DO YOU COOK AT HOME?\"Larissa and I enjoy walking around the local farms. Parkinson’s disease (PD) is a neurodegenerative disorder that affects predominately dopamineproducing neurons in a specific area of the brain called substantia nigra.Symptoms generally develop slowly over years. The progression of symptoms is often a bit different from one person to another due to the diversity of the disease. People with PD may experience:• Tremor, mainly at rest and described as pill-rolling tremor in hands. Other forms of tremor are possible.• Bradykinesia or slow movements• Limb rigidity• Gait and balance problemsThe cause remains largely unknown. Although there is no cure, treatment options vary and include medications and surgery. While Parkinson’s itself is not fatal, disease complications can be serious. The Centers for Disease Control and Prevention (CDC) rated complications from PD as the fourteenth cause of death in the United States.TEN EARLY SIGNS OF PARKINSON’S DISEASEIt can be hard to tell if you or a loved one has Parkinson’s disease (PD).Below are ten signs that you might have the disease. No single one of these signs means that you should worry, but if you have more than one sign you should consider making an appointment to talk to your doctor.1. TremorHave you noticed a slight shaking or tremor in your finger, thumb, hand, or chin? A tremor while at rest is a common early sign of Parkinson’s disease.2. Sudden movements during sleep may be a sign of Parkinson’s disease.5. Trouble Moving or WalkingDo you feel stiff in your body, arms, or legs? Sometimes stiffness goes away as you move. If it does not, it can be a sign of Parkinson’s disease. An early sign might be stiffness or pain in your shoulder or hips. People sometimes say their feet seem “stuck to the floor.”6. Small HandwritingHas your handwriting gotten much smaller than it was in the past? You may notice the way you write words on a page has changed, such as letter sizes are smaller, and the words are crowded together. A change in handwriting may be a sign of Parkinson’s disease called micrographia.7. A Soft or Low VoiceIf there has been a change in your voice you should see your doctor about whether it could be Parkinson’s disease. Sometimes you might think other people are losing their hearing when really you are speaking more softly.

He expected more. He believed we were capable of college-level work, which is why he also taught the dual enrollment courses I took through Edison Community College, now Florida Southwestern State College.At the time, I didn’t fully understand what that opportunity meant. I just knew someone believed in me.Mr. Godley passed away not long after he retired. Years later, I had the privilege of working alongside his son, also an exceptional educator. That’s the power of public schools. They are built on legacy. On commitment. 46 | North Naples News April 2026One of the rewarding aspects of being a holistic medical doctor is that you get to learn about the medicinal benefits of various foods and how to use them in your practice. Today I will highlight some of these important functional foods. Take a look at the cantaloupe for example. One cup of cantaloupe provides 110 percent of the Recommended Daily Allowance (RDA) of vitamin A in the form of beta carotene. This cleansing antioxidant combines with the melon’s high-water content to help speed the elimination of fat-trapping toxins from the body. So, if I have a patient who is trying to optimize his or her weight and is asking for a nutritious breakfast, I recommend combing a small slice of cantaloupe with either a small cup of plain low-fat organic yogurt, or a small serving of low-fat organic cottage cheese, or just about any other non-processed source of protein you like. As you face Florida’s heat—adding HEALING FOODSa cantaloupe to anything you eat will make you feel brighter, cooler, and more hydrated. Another great fruit to use abundantly in your Naples home is watermelon. Packed with skin-nourishing antioxidants, like vitamins A, C, and lycopene—watermelon can help strengthen the skin’s sun defense network by preventing free radical damage that can cause wrinkles and sunspots. In fact, you probably noticed how so many skincare companies are adding watermelon lately as an ingredient in creams and moisturizers. In the kitchen, combining one small slice of cool watermelon with any healthy source of unprocessed protein like a scoop of avocado or a low-fat organic mozzarella stick, will make a great nutritious snack and keep your complexion hydrated and radiant. A lesser-known fruit chock-full of nutrients is kiwi. Vitamin C and polyphenols in kiwi can reduce levels of triglycerides by up to fifteen percent. A perfect breakfast or a snack for someone trying to mend their metabolic syndrome naturally is to blend one small cup of organic non-fat kefir or plain yogurt, one kiwi fruit cleaned and diced, and one teaspoon of chopped fresh mint for a delicious smoothie. You have probably noticed that I often recommend non-fat or low-fat yogurt or kefir as a medium for many fruit snacks. These two happen to be in the top ten calcium-rich foods out there. And calcium can reduce dietary fat absorption by a whopping 250 percent. Calcium also suppresses the release of hormones that slow down the metabolism. In addition, kefir and yogurt’s natural combination of calcium with vitamin D improves our sensitivity to insulin. Some people shun dairy for allergic reasons, whether it may be asthma connection or gut sensitivity. However, I would like to set the record straight for kefir and yogurt. Both are cultured fermented foods. The live bacteria in both produce their own lactase, which means that even if you are lactose-intolerant, you can still enjoy them. Kefir and yogurt are also loaded with vitamin B12, phosphorus, magnesium, vitamin D, organic acids, and over sixty different strains of live bacteria making them a very rich source of probiotics for the gut. However, if you have absolutely no tolerance for these products, you can easily substitute them with almond or cashew milk. When it comes to healthy eating, my philosophy has always been to stay away from ninety percent of what is sold in the supermarket. Instead, go for fresh fruits and vegetables, and a healthy and organic source of dairy and poultry. Smaller wild fish is a bonus, as are lentils and legumes. Food is much more exciting and safer than medications and should be engaged as a healing modality as much as possible.
