collected and the cheesemaking process begins that same day.
A gentle, low temperature process is used to pasteurize the
milk and a custom blend of cultures is added. These cultures
are selected to offer the same robust flavor profile and balanced
aromas found in many raw-milk blue cheeses.
Once the wheels are formed, they are transported to the Caves
de la Collonge. Built in an abandoned railway tunnel, the Caves
de la Collonge possess the ideal conditions for aging these
blue cheeses. The wheels are turned by hand many times
during maturation and the tunnel’s naturally high humidity, cool
temperature, and gentle airflow work together to develop the
cheeses’ unique characteristics to their full potential.
Finished wheels are selected and packed by hand before
shipping directly to the US. With a direct connection to the cows,
cheesemaker, and affineur, we are very proud to offer these
world class blue cheeses.

Roquefort dates back to 79 A.D., and it was granted an AOC designation in 1925—the first in France.
It continues to be ripened in the natural caves of Mont Combalou in the commune of Roquefort-sur-
Soulzon. The cheeses are made with raw sheep’s milk and must be aged at least 3 months to be
called Roquefort. At this point the wheels are cut in half and graded according to the quality and
distribution of blue veining. Papillon releases the majority of their cheeses at 3 months but their best
cheeses, like this Black Label selection, are wrapped in foil and held back for additional aging. Aged
for a full 6 months, this cheese is intense. The paste has a crystalline crunch and firm texture that
melts across your palate. The blue mold flavors dominate but their spicy flavors are kept in balance
by the sweet grassiness of the sheep’s milk and a nutty, salty finish.
