While the population of Texas is less than 1 percent Jewish, Jews are fairly prominent in the
big cities and the majority of Texas Jews live in Houston, Dallas-Fort Worth, San Antonio,
Austin and El Paso.
But some Jewish life exists out of the big cities. Fredericksburg, like many Texas small
towns, does not have many Jewish residents or institutions, but despite being in a sparsely
populated area, there is Jewish life in the region.
Twenty-four miles from Fredericksburg, in Kerrville, the Community of The Hill Coun-
try meets at the local Unitarian-Universalist Church. Its website (thejchc.org) tells about its

LIKE FOOTBALL FANS the world over, we provisioned gen-
erously for Super Bowl Sunday. As a result, we have a surplus
of things that we normally do not overstock, including a glut of
beer, several slabs of cheddar cheese and a large jar of mustard.

In an effort to use some of these ingredients, I devised the
following recipes, all of which offer a warm, comfort food vibe.
Make the chicken and rutabagas for dinner tonight. If you have
leftover chicken, enjoy it cold on a sandwich or salad for lunch
tomorrow. If you have extra rutabagas, toss them in a salad
tomorrow night with the Welsh rarebit for a cozy winter supper.

Amanda is a graduate of Shippensburg University, where she earned a Bachelor of Arts in
human communication studies. She is the recreation coordinator at Dunwoody Village. Michael
is a graduate of University of New Haven where he earned a Bachelor of Arts and Sciences in hos-
pitality administration/management and is a group sales specialist at Apple Vacations.
