WITH BLACK GARLIC
Just because I’m a Jewish chef

doesn’t mean I was born with a
natural talent for matzoh balls.
Early on in my career, I was
hired to cater an upscale
Passover meal, and I put foie
gras matzoh balls on the menu.
I cooked hundreds of dollars
worth of foie gras, using the ren-
dered fat in the matzo ball mix
and then stuffing each ball with
a little nugget of the liver. The
matzo balls fell apart and ended
up in the garbage can.

There are a lot of theories on
how to produce fluffy matzoh
balls, from folding in whipped
egg whites to lightening the mix
with seltzer. For my money, a lit-
tle bit of baking powder does the
trick nicely. Matzoh balls are
comfort food, and there is also
something warm and comfort-
ing about black garlic. Like soy
sauce, its fermented taste both
elevates and deepens the broth.
Like tamarind, it has a rich
sweetness balanced by enough
acidity to keep it in the savory
realm. Fortified with the black
garlic, this soup is how I always
imagine Passover in Southeast
Asia would taste.

A High Holiday Message from Jewish Federation President Bud Newman

My grandfather, david newMan, who never attended school, came to Philadelphia from Austria in the late
1800s. He went into the business of collecting scrap paper, rags, metal and iron, which he sorted, baled and sold to dealers
and mills. In 1918 he bought an old factory building, installed a used paper machine and began to manufacture cardboard.
My father and his sister left school to work in the business. My family has been in the paper industry ever since.

Around the same time my grandfather launched his business, he also engaged with others in building a vibrant Jewish
community in West Philadelphia and actively participated in founding the West Philadelphia Jewish Community Center.
My extended family celebrated the holidays as well as life events like my Bar Mitzvah at this synagogue. My father and his
siblings also became involved in the Allied Jewish Appeal of Philadelphia. I was always taught philanthropy is a mitzvah.
When I was asked to get involved in the Jewish Federation in my early 20s, it felt like the natural thing to do. I became active in missions,
the Allocations Committee and the Board of Trustees, and chaired the Paper Trades Division and Philadelphia’s first Jewish Population Study.
Eventually, I became interested in additional Jewish organizations, and have stayed engaged in Jewish life ever since. I returned to a more active
role in the Jewish Federation a few years ago. I accepted the Presidency at this time last year because I felt it was my calling — my time to step
up and contribute all I can to enhance and grow our Jewish Federation.
While I think about my personal story often, it takes on greater meaning at the High Holidays, when I am surrounded by my family and
our traditions. As we are called to reflect on our past at this special time, I am especially thankful for the business and the community my grand-
father and extended family made possible for me and so many others.
The beginning of our Jewish Federation’s fiscal and program year coincides with the Jewish New Year. This makes good business sense. It
enables us to evaluate our successes and where we may have fallen short over the past 12 months as a community and as an organization.
We have made great strides in a number of key areas during this past year. For example, we have built a strong executive team, organized
outreach to synagogues of all denominations across the five counties we serve, engaged more young adults, begun a new editorial chapter at the
Jewish Exponent, met with representatives of our partner organizations and begun to undertake a critical assessment of all our real estate holdings.
I also have seen first-hand the tremendous impact of some of the many programs we support: families who receive food packages from our
Mitzvah Food Project; seniors who benefit from vital home repairs through our Rhawnhurst NORC; the outstanding Jewish day school education
some of my grandchildren are enjoying; Federation Housing’s commitment to meeting our seniors’ basic needs; food deliveries by Jewish Relief
Agency volunteers; safety-net services provided by Jewish Family and Children’s Service and the support overseas partners like the American
Jewish Joint Distribution Committee provide to Jews in need in Israel and around the world. I truly could go on and on.
Our greatest challenge in the year ahead will be getting and keeping more people involved. Today, we can assimilate into the fabric of our
society in a variety of different ways. There are opportunities available for people to give their time, talent or resources to many other commu-
nity-minded programs. We must help everyone see for themselves how much value they can get and give by partnering with us. I am optimistic
we can do this. For nearly 115 years, we have brought together our community to care for our own.
Similarly, our biggest opportunity is to get more young people involved with us, from every corner of the region. We recently enjoyed an over-
whelmingly successful program in Bucks County — the Maccabeats concert at Shir Ami attended by 800 people of all ages. We are examining
“what went right,” so we can use it as a model for other programming. Also in the year ahead, I am committed to growing our campaign totals, ex-
panding our missions program and better communicating with everyone about the Jewish Federation’s rich history, mission and ongoing accom-
plishments.

Our greatest strength is the people of all ages and beliefs who are passionately committed to improving our world through the Jewish
Federation. When I meet with someone who feels disenfranchised, I listen closely to what they say and apologize for any of our past mistakes.

anyone who has moved away from us in the past will reconsider and give us another chance in the New Year. I promise we will find you a place
that matches your interests and enables you to make an impact. The more people who are involved, the stronger we can be for each other and
our Jewish community locally, in Israel and worldwide.
The High Holidays also give us the opportunity to celebrate our blessings. I want to thank the many volunteers and professionals who helped
me learn the business of the Jewish Federation this past year and worked so hard to ensure we succeeded in saving and transforming lives. I
also want to let our donors know how much we value their generosity and trust in our endeavors to accomplish our goals. I would like to know
