FIRST CLASSICAL EUROPEAN RESTAURANT WITH TABLESIDE COOKING

Bangkok, Thailand, November 2009… Since May 2004, Grand Hyatt Erawan Bangkok
embarked upon an expansive project, “Reaching New Heights” where a number of
innovative developments were designed to further enhance its outstanding facilities and
services.

It certainly has been a time of dynamic change and the latest phase in its development
sees the transformation of the Mezzanine Level in the heart of the hotel, overlooking the
energetic lobby from old function rooms into an exciting new restaurant, Tables offering
Classical European dishes cooked Tableside which is due to open before this Christmas.
A restaurant which will re-inforce the Grand Hyatt Erawan’s reputation as the preferred
destination for dining in Bangkok, a place to celebrate and entertain but also an ideal
venue for business lunches and dinners for local and international guests.

Designed by the world renowned designer, Tony Chi, Tables was conceptualized to
evoke the nostalgia of Classical European Cuisine, mainly French inspired, to take you
back to a “Once Upon A Time” experience. The Art of Tableside Cooking on intricately
designed cooking tables creates a sense of showmanship and entertainment, offering a
surprise element to complement the dining experience.

Tables features a main dining room with a capacity of 105 seats offering a combination
of lounge and formal seating spaces with five dedicated “live” cooking tables. Two
private rooms with a capacity of 12 and 32 people are each equipped with two cooking
tables, ideal for private dining and entertainment; and the bar where cocktails are
expertly mixed.

Tables offers guests a myriad of choices for a true taste of Classical European Cuisine
and serves only the freshest produce and finest ingredients, hand-selected from
reputable farms including the hotel’s own organic farm in Khao Yai (200 km northeast of
Bangkok) and other natural purveyors from around the world.

Executive Sous Chef – Tables, Stefan Beer has created a menu which is comfort food at
its best, with an emphasis on doing the basics right. Sharing the same understated
confidence of Chef Stefan himself, the menus take an unpretentious approach to fine
dining, evident by the fact that most dishes remain infinitely authentic, rarely involving
more than three or four key flavours. Chef Stefan leads a talented young team in
executing a vision rooted in sophisticated simplicity.

Debut items for appetizers will include “Joselito” Iberian ham, Beef steak tartar, Scottish
Smoked Atlantic salmon, Boston Lobster bisque, Fine de Claire oysters. The signature
main dishes will offer the world’s finest selections such as Chateaubriand, Steak au
poivre, Blackmore’s Wagyu beef, Rack of Gippsland lamb, and Dover Sole ‘Meuniere’.
Tables’ dessert selections are refined and delicious. The dedication of the pastry chef
shines through in the artful execution of everything from Crêpes Suzette, Baked Alaska,
Pineapple flambé, homemade cakes and souffle’s, to sorbets and mignardises.

As well as exquisite dining, Tables also offers an extensive range of alcoholic and non-
alcoholic beverages. The Wine Towers contain over 1,500 bottles of the finest premium
imported wines and champagnes with over 300 different labels with a skilled wine
sommelier to assist guests with their wine selections. A wide range of non-alcoholic
drinks will also be available including the finest Lavazza coffees and loose leaf aromatic
Ronnefeldt teas.

celebrations this year” says Richard Greaves, General Manager of Grand Hyatt Erawan

Bangkok. “Tables is a tribute to the old world featuring Tableside Cooking where the art

of showmanship will be displayed. It is a place to enjoy good food, entertain and be

entertained, with friendly and efficient service, offering good value for money.”

Tables will be open seven days a week from 12:00noon to 2:30pm and from 6:30pm to
11.00pm.

Since 2004 the hotel has opened, the residence, Bangkok’s first residential-style event

facility, the Erawan Tea Room, a Thai restaurant with a nostalgic feel overlooking the

Erawan Shrine, i.sawan Residential Spa & Club, a unique facility dedicated to

pampering, fitness, cuisine, relaxation and accommodation, the residence 305, a

residential-style apartment for entertaining with a show kitchen and The Campus, a

University-inspired learning and social centre dedicated to meetings and events.
