Chocolate Brownie with Vanilla Ice-cream & Chocolate Sauce. Ingredients For the Brownies Serves 4 16 tablespoons unsalted butter 2 cups sugar 4 eggs lightly beaten ½ cup unsweetened cocoa powder 2 teaspoons vanilla extract 2/3 cup all-purpose flour sifted. 13 ounces semisweet chocolate, chopped into small pieces ½ cup toasted hazelnuts 4 cups vanilla ice-cream For the Sauce: ½ cup cream 6 ½ ounces semisweet (dark) chocolate, cut into small pieces. Directions: 1. Preheat oven to 350 degrees F. Lightly butter an 8- inch square cake pan. FOR THE BROWNIES: Melt the butter in a saucepan over low heat. Remove from heat and stir in the sugar, eggs, cocoa powder, flour and vanilla. Add the chopped chocolate and hazelnuts. Pour into the prepared pan and baked for 40-45 minutes, until a toothpick inserted in the center comes out clean. Cool completely in pan. FOR THE SAUCE: Heat the cream until it is just about to boil. Remove from the heat and add the chocolate. Let stand for 10 minutes before stirring until smooth. When cool, remove the brownies from the pan and cut into 8 rectangles. To serve, slice the ice-cream into 4 rectangles, the size of each brownie. Place between 2 brownies and serve immediately with chocolate sauce on top. 106 CNM | CARIBBEANNETWORKMAGAZINE.COM

108 CNM | CARIBBEANNETWORKMAGAZINE.COM Recipe for Coffee Crunch Cake Makes one 10-inch cake Ingredients 2 ¼ cups cake flour (not self-rising) 1 ½ cups sugar 1 tablespoon baking powder 1 teaspoon salt ½ cup vegetable oil 6 large eggs, separated Zest of 1 lemon (2 teaspoons) 1 tablespoon pure vanilla extract Coffee Frosting – Coffee Crunch Directions 1. Preheat oven to 325 degrees. In a large bowl, sift together flour, ¾ cup sugar, baking powder, and salt. Add ¾ cup water, oil, egg yolks, zest and vanilla; beat until smooth. 2. In the bowl of an electric mixer fitted with the whisk attachment, whisk egg whites on mediumhigh speed. With machine running, add remaining ¾ cup sugar in a slow steady stream, beating until incorporated and stiff glossy peaks form. 3. Remove bowl from mixer. Gently but thoroughly, fold beaten egg whites into batter, in two additions. Pour into a nonstick 10-inch tube pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Remove from oven, and invert onto a narrow necked bottle. Let stand until cool, about 1 hour, before removing pan. 4. Place cake on a serving platter. Cover cake with an even layer of frosting. Three months later , the daughter called her father and told him , she was pregnant. The father , angry as it could be: “before you leave , what have I told you? “. “Dad, I did exactly that, he was touching both at the same time, so I told him “ don’t stop”! Here’s a Plan About 2 years ago my wife and I were on a cruise through the western Mediterranean aboard a Princess ship. At dinner we noticed an elderly lady sitting alone along the rail of the grand stairway in the main dining room. I also noticed that all the staff, ships officers, waiters, busboys, etc., all seemed very familiar with this lady. I asked our waiter who the lady was, expecting to be told she owned the line, but he said he only knew that she had been on board for the last four cruises, back to back. As we left the dining room one evening I caught her eye and stopped to say hello. We chatted and I said, “I understand you’ve been on this ship for the last four cruises.” She replied, “Yes, that’s true.” I stated, “I don’t understand” and she replied, without a pause, “It’s cheaper than a nursing home.” So, there will be no nursing home in my future. When I get old and feeble, I am going to get on a Princess Cruise Ship. The average cost for a nursing home is $200 per day. I have checked on reservations at Princess and I can get a long term discount and senior discount price of $135 per day. That leaves $65 a day for: 1. Gratuities which will only be $10 per day. 2. I will have as many as 10 meals a day if I can waddle to the restaurant, or I can have room service (which means I can have breakfast in bed every day of the week). 3. Princess has as many as three swimming pools, a workout room, free washers and dryers, and shows every night. 4. They have free toothpaste and razors, and free soap and shampoo. 5. They will even treat you like a customer, not a patient. An extra $5 worth of tips will have the entire staff scrambling to help you. 6. I will get to meet new people every 7 or 14 days. 7. T.V. broken? Light bulb need changing? Need to have the mattress replaced? No Problem! They will fix everything and apologize for your inconvenience. 8. Clean sheets and towels every day, and you don’t even have to ask for them. 9. If you fall in the nursing home and break a hip you are on Medicare; if you fall and break a hip on the Princess ship they will upgrade you to a suite for the rest of your life. Now hold on for the best! Do you want to see South America, the Panama Canal, Tahiti, Australia, New Zealand, Asia, or name where you want to go? Princess will have a ship ready to go. So don’t look for me in a nursing home, just call shore to ship. P.S. And don’t forget, when you die, they just dump you over the side at no charge. Fishing Aman was stopped by a game warden in Northern Minnesota recently with two buckets of fish leaving a lake well known for its fishing. The game warden asked the man, “Do you have a license to catch those fish?” The man replied to the game warden, “No, sir. These are my pet fish.” “Pet fish?!” the warden replied. “Yes, sir. Every night I take these fish down to the lake and let them swim around for a while. I whistle and they jump back into their buckets, and I take em home.” “That’s a bunch of hooey! Fish can’t do that!” The man looked at the game warden for a moment, and then said, “Here, I’ll show you. It really works.” “O.K. I’ve GOT to see this!” the game warden replied. The man poured the fish in to the water and stood and waited. After several minutes, the game warden turned to the man and said, “Well?” “Well, what?” the man asked. “When are you going to call them back?” the game warden prompted. “Call who back?” the man asked. “The FISH.” “What fish?” the man asked.
