The Super Bowl What’s a poké bowl?

healthy bowl is a traditional Hawaiian dish

As time went on, specific flavours began to
appear in poké. These flavours came from
neighbouring countries such as Japan and
Korea. You can have lots of fun combining
these bowls and keep adding as many
flavours as you like. The likes of pickles,
local seaweeds and kimchi all mix in
beautifully so just go for it. It’s very healthy
and easy to make, and you can achieve the
sushi taste without the hassle of rolling.

Healthy Poké Bowl

INGREDIENTS (serves 4)

1lb sushi grade ahi tuna cut into 3/4-inch

1/4 cup soy sauce

1tsp rice vinegar

1½ tsp sesame oil

¾ tsp red pepper flakes, crushed

50g spring onions, sliced

1/2 tsp sesame seeds plus more for

2 avocados

1 carrot, shredded

Handful of Irish seaweed

50g salad greens

400g brown rice or white rice, cooked

1. In a medium sized bowl combine the ahi
tuna, soy sauce, rice vinegar, sesame oil,
crushed red pepper flakes, green onions
and sesame seeds. Stir to combine. Serve
immediately or refrigerate covered for
up to two hours before serving. Toss to
recombine in the sauce before serving.

2. When serving, layer the bowl with the
cooked rice. Top with the salad and then
layer the poké on top. Surround the poké
with avocado, shredded carrots, sliced
cucumber and Irish seaweed. Additional
toppings that also work well with this dish
include pickled ginger, wasabi and crab.
