2. Turn out onto a floured board
and knead lightly. Cover and
chill for at least 30 minutes or
until ready to use.
3. Lightly flour some baking
parchment and roll the pastry
out on the paper to about 20cm x
30cm (8in x 12in).
4. Spread the mincemeat
evenly over the pastry, leaving
an empty margin at the end
furthest away from you. Roll
carefully away from you, using
the baking parchment to keep
the pastry intact as you roll.
Dampen the margin with a little
milk and continue rolling until
the margin lies at the base of the
roll. Twist the ends of the paper.
Chill in the fridge for two hours.
5. Preheat oven to 200°C/400°F/
