Chairman’s Message
David Arnold

I hope everyone has enjoyed the very warm summer! The weather has been perfect for days at the pool and
warm evenings by the Poolside Bar and Cafe. I must say the Poolside Bar has become one of the most popular
areas to “hang out” at the club. The staff has noted many improvements and service recommendations that
we plan to implement before next season. We hope to have a dedicated menu for the Bar and Cafe next year
that would facilitate quicker turnaround for your food orders, the addition of a shade awning to cool down
the dining tables and finally improved lighting. While we are quickly reaching the end of swim weather and
the beginning of school, remember the Poolside Bar will be open for those beautiful late summer early fall
evenings.
Attention golfers! We will NOT be core aerating the greens and fairways until October this year! You may have
noticed we performed a treatment to the greens right after our Invitational this year. The DryJect procedure
on our greens was a one step aeration, dry sand injection process that provided much needed amendments
to the green’s soil. This was the first time we ever employed the DryJect process on our greens and Chuck was
quite impressed with the results. Please remember if you have any questions about the golf course conditions,
Chuck is updating his blog daily with course preparations and planned maintenance activities.
A little note about membership responsibilities on the golf course. Please remember to repair your ball marks
on the greens and rake the bunkers properly. You may have noticed we have decided to leave the rakes in
the bunkers so that we have a consistent look around the golf course. As some of you know, I am on the golf
course most days and I have noticed an unusual number of times where bunker rakes are left outside the
bunker or thrown in haphazardly without consideration for your friend playing behind you. Make sure the
rakes are placed towards the back of the bunker so that balls do not come to rest against a rake in a front lip
or corner. Thanks so much for your help!! With all this being said, we will have our golf course for the whole
month of September, arguably some of the best golf conditions and weather of the year. Come on out and
play some early fall golf!
The 2018 Invitational was quite the success! Congratulations to our Invitational Champions Doug Sibila and
his partner Tom Locke. I hear it was quite an exciting finish. I hope everyone enjoyed the changes made to
the event this year. Co-Chairs Joe Marshall and Bill Nolan worked very hard with our staff to put on a special
tournament and I have received many positive comments!
Please remember we will be overlaying the parking lot with new asphalt in early October. The project should
be completed in two days and we plan to do the work at the same time the course is closed for aeration. The
new security cameras have been selected and we are finalizing the bid process and selection for the generator
hook up. We expect to have these three projects completed before the end of fall.
Finally, believe it or not, now is the time to start reserving your spot for Christmas parties at Brookside! We
always have a busy December and we hope you are planning to have your office or family parties at the club!
Please make your reservations soon, I hear we are filling up! Call Chef Ken at 330.477.6505, ext. 176. Our year
end financial performance depends heavily on November & December Food and Beverage activity.

From the President’s Desk

Maybe you enjoy Brookside for the golf, or the tennis and fitness facilities or the pool for summertime fun
or simply to dine with family and friends among a variety of offerings. While these are all enviable reasons,
another attraction you have as a member is the opportunity to host an event at the club. While this is not
a new idea, it is worth a gentle reminder that each of you have the luxury to sponsor a friend, colleague, or
organization at Brookside. Investments to the club continue to make Brookside a desired location and venue
to host events, small or large. Where we look to distinguish ourselves is to learn your desires and to meet
your goals with stress-free planning along with providing attentive care and quality food. Please think of your
club first.
While speaking of hosting events, I came across an article on how Millennials shop for wedding venues. Some
of the comments were; “They walk in the door with an educated opinion, as they have a strong desire to
be informed and feel like whatever they’re buying is worth it… and reviews are imperative to the millennial
buying experience… Keep an eye on the images that are posted on your property, and make sure that your
feeds on the major social networks have plenty of gorgeous images for curious couples just dipping their toes
into the wedding planning water” I share this with you as Brookside is a wonderful venue for a wedding and
we are proud to have received many testimonials sharing memorable experiences. We are teaming up with
local vendors to host a bridal show at Brookside early next year. We would enjoy your participation or share
with a friend.
On to other club news. Fall is a terrific time to enjoy golf; the crisp, cool days lend themselves to some of the
best conditions of the year. Remember that we are aerifying in October this year, so be sure to join us for
pristine conditions through the month of September. If golf is not on your schedule, be sure to mark the date
of October 6th for the return of the very popular Oktoberfest with dueling piano entertainment. This was one
of the club’s highly attended events last season.
One of our initiatives under the newly formed Food and Beverage committee is to strategize on how to
best deliver on the member experience. We as a team are excited to review this initiative and to develop a
strategic plan with the committee’s input to enhance your experience, from staffing to service to product.
Look for more details to follow on this important topic.
Some odds and ends; Space heaters will replace ceiling fans under the patio as the weather changes this fall to
allow members to enjoy extended outside dining. The Poolside Bar hours will be determined by the weather
and communicated to you. In early October, paving will commence on the parking lots.
Thank you also for your understanding as the club hosted two very successful Hall of Fame events this year.
While positive for the club both financially and from a public relations perspective, we realize this is your club
and appreciate your backing. It is not lost on Hall of Fame inductees who visit Brookside, recognize the club
and want to host a party here.

Staffing news; we wish to offer a hearty congratulations to Matt Guilliouma for 44 years of service primarily
overseeing the Men’s Locker Room, but always helping out wherever needed. A farewell event will be scheduled
in his honor. We would also like to congratulate the scholarship winners from this past year and to thank Mr.
Dan Clay, Mr. Tom Schervish and all the committee members who diligently look to promote this outstanding
opportunity for Brookside team members. We all benefit with the return of these fine young men and women
each year. Speaking of returning each season, we were terrifically pleased this year to have Mark Rogers
head up the Pool and Swim team. It was evident his leadership led to a successful return to the structure and
decorum of the pool environment and overall member enjoyment. With team members like Mark and the
addition of Adam Symons as the new Director of Dining & Banquet Services, joining the team, we are moving in
the right direction to enhancing your Brookside experience.

A farewell to Matt Guilliouma!

WORK, SUPPORT &
FRIENDSHIP, MATT!

Matt, our Men’s Locker Room Manager is retiring this October after an
astonishing 45 YEARS of employment for Brookside!
Matt was born on July 28, 1955 and a lifelong resident of Jackson
Township. He is a graduate of Jackson High School.
Upon graduation and at the age of 18, Matt applied for the position of
shoe shine at Brookside. He was hired on March 3, 1973 at the hourly rate
of $2.00 an hour.
Ten years later, Matt became Assistant Locker Room Manager on June 1,
1983 at the rate of $5.00 an hour. Imagine that!
After the retirement of Raymond Mayle, Matt became Locker Room
Manager in July 2013.
Matt has been a devoted, loyal, outstanding employee for 45 years. His
a last day of work is October 28 - make sure to stop in to give Matt your
well wishes!
A farewell lunch in the Men’s Grill will be announced soon!

*Important Brookside Governance Reminder
Over four years ago Brookside changed the way we mange the day-to-day
activities of the club. We moved to a management model where a club
President would manage all aspects of the club for the membership.
Mr. Bill Shea, is our club President, and he is responsible for all staff
activities and the profit and loss of our club. All department heads from
our Executive Chef, Office Administration, Director of Tennis, Director of
Golf, Greens Superintendent and Maintenance Manager work directly
for Mr. Shea. No members are to provide any direction to staff members
related to the day-to-day operations of the golf course or clubhouse. Any
issues related to club staff or club activities are to be directed to Mr Shea.

Dear Nine-hole Golfers and Those Who Might Want to Join Us:
The fall is approaching and it’s the perfect time to play a few leisurely rounds of golf. Tee
times starting at 8:30am and 9:30am through 10:10am. The later times may allow you to get
the kids off to school and still have time to fit in 9 holes of golf! Fun formats are scheduled
each week including:

The Bubble Game ~ September 11
Odds & Evens ~ September 18
Foursome Scramble ~ September 25th
August was a very busy month beginning with the Club Championship and the End-of-Summer
Fun Day planned by Julie Somers and Tara Gregory. The Member/Member is rescheduled for
September 11!

If you have been considering playing in a group, September is a great time to try it out. Fewer
people golf, so you will feel less pressure as you test your playing skills. Even if you are not a
registered member of the group, we welcome you to come out on a Tuesday morning. Contact
Cory Kumpf in the Pro Shop for a tee time or call me.

18-hole Lady Golfers

And in the blink of an eye, our season is nearly over. July and August were busy months filled with
friendly competition, kicked off by Guest Day. Thanks to all the cowgirls and guests who spent a day in
the Wild West. The team of Molly Streb, Susie Gardner and their guests were the winners. See photos
below of the fun event!
July wrapped up with the Brookside Bowl event in weather conditions ideal for ducks, not golfers.
Francie Morrow, however, was not discouraged by the deluge. She finished with a net 62 and is the
winner of the 2018 President’s Cup.
We then plunged into August with the Presidents team event. Congratulations to the foursome of Pam
Clay, Janet Kaboth, Shirley Pruett and Pat Ripple who finished with a team score of 55.
The 2018 Women’s Club Championship round took place August 14th. Alison Cress played an
impeccable round and finished with a score of 74, titling her the 2018 Brookside Women’s Club
Champion in the ‘gross score’ flight. Janet Frey also played an impressive round and was right behind
Alison - finishing with a 76. In the ‘net score’ flight, there were many great finishes. Pam Clay, though,
was unbeatable with a net score of 66, and is the 2018 Brookside Women’s ‘Net’ Club Champion.
Congratulations to these ladies and thank you to all who played in the Championship.
The Member/Member has been rescheduled for September 11th in place of the Sandridge Trip.
Watch your email for details. Our Closing Day takes place September 25th. We will have breakfast and
our annual meeting, followed by golf. Specific information will be posted closer to the date. In the
meantime, please let us know what position you are able to fill for the 2019 season.
As always, thank you to Cory and the Pro Shop, Mark and the Bag Room staff, and Julie in the Locker
Room.

Golf Course News

FALL AERIFICATION

We will begin aerifying the greens and fairways the first week of October. This
process will take approximately four days to complete “weather dependent”. Our
plan is to start on the greens Monday, October 1st and have them completed by the
end of the day. We are contracting out the fairway aerification this year. This process
is scheduled to begin on Wednesday, October 3rd and all of the fairways will be
completed by Thursday, October 4th. The agronomy team has been picking away at
the tee aerification throughout the season and we will continue to pick away at them
throughout the Fall. The thatch build-up is so severe we will be aerifying these on a
continual basis around play until late Fall. We will also be performing an aggressive
vertical mowing to remove as much thatch throughout the Fall season.

Employee Spotlight: Brandon Coleman

Craft Cocktails

Every Thursday with Brandon

Brandon has been here for a few months now, mainly in the Men’s Grill but also
helping at the poolside bar & patio. We are excited to bring on Brandon full
time and start utilizing his amazing talents! He has a true passion for creating
unique (and delicious!!) cocktails. Next time you see him behind the bar order
one of his famous cocktails, like the one in the photos, a Hickory Smoked Infused
Old Fashion, you won’t be disappointed!
My name is Brandon Coleman and I'm from Wayne, Ohio. I have roots in Musical
Theater and love performing but knew that traditional college wasn’t the right
path for me. In 2012 I got my Mixology certification. I worked as the head
mixologist of the Forbes Four Star restaurant called The Final Cut Steak and
Seafood in the Hollywood Casino in Toledo, Ohio.
My wife Megan and I were married in May 2016 and we moved to Canton,
because she said jump and I said how far? We have one child so far, a 10 month
old daughter named Freyja.
I have be working at Gervais Vineyard for the past two years and now I'm excited
to begin this new chapter here at Brookside.
A couple interesting facts about me: From about 2006-2015 I was a professional
Magician and performed all over Ohio, and Michigan, as well as a private show for
a Prince of Kuwait! Magic is also how I proposed to my wife. I am also a Hobbyist
Blacksmith.

Hello Members of BCC!!! I want to take this opportunity to officially
introduce myself to you. My name is Adam Symons and I am very happy
to have accepted the position as Director of Dining & Banquet Services,
here at the Club. I am a graduate of Lake High School and The University
of Akron with a B.S. in Human Resources Management. I have 20 years
of hands on experience in the private club industry between Glenmoor
Country Club and most recently Fairlawn Country Club. I enjoy entertaining
my family and friends, wine, working around my home and am an avid
theatre go-er. I look forward to meeting each and every one of you!!

Jeff has been with us full time for a few months now, mainly overseeing the

As summer comes to an end and autumn draws near, the leaves will be changing colors and our menu will
reflect with many seasonal ingredients. Fresh vegetables, fruit, beef, poultry and seafood. The menu will be set
for mid-month start. As always, we welcome your comments and questions in regards to the menu changes.
We would like to thank our wonderful, hard-working summer staff for making this another memorable summer
at the Brookside!

I know the Holidays seem far off but it’s never too early to book those holiday parties! I look forward to
working with you as we plan your event and would be happy to help you decide on recipes that will make your
event truly special.

Another reminder we start thinking about fall and winter...perfect timing for to schedule one of our special
Chef’s Tables! If you haven’t experienced this yet, please call me to reserve yours as dates are beginning to fill
up.

I would like to say a HUGE congratulations to Mr. Shea on his first full year here at Brookside CC - a special
thanks to him for his guidance and support of the staff.

Chef’s Monthly Food Trend: Amaranth

Amaranth, known as the Mexican grain of the Gods, has been cultivated
for more than 8,000 years. A staple food of the Aztecs, today the
demand for this nutrient-packed grain is growing. Although classified
as a pseudo-cereal, it is grown for its edible starchy seeds [but not from
the same family as wheat & rice]. The essential benefits of the grain are
its ability to spur growth and development, boost the immune system,
increase circulation, lower your appetite and protect the heart.
TIP: Amaranth grain can be found in a variety of health shops and high
end grocery stores.
We are incorporating this healthy grain into the Lunch Power Bowl on
the upcoming Fall menu!
