Classes/ Trainings Offered from the FNS Department
for the 2017-18 School Year

Mandatory for Staff:

New Hire Orientation – Each new hire for our department must attend a
new hire orientation within 2 weeks of hire. This orientation is for all new hires;
management and staff. This is a separate orientation from the general
orientation given at Kirby-Smith. This new hire orientation focuses on FNS
policies and procedures. New hires are introduced to district office staff and
their roles. New Hires are given a food service employee handbook with basic
information concerning payroll, working hours, meals/breaks, attendance, leave
time, dress code, safety, performance evaluations, and customer service.

Blake schedules the class, ensures payment for attending, and teaches the class.

Foundations Class – This class is designed to give staff new hires a basic
understanding of food safety, sanitation, customer service, menu planning and
nutrition. Each new hire staff member must attend this 8 hour course within
the first 6 months of employment to maintain employment. IT IS THE
RESPONSIBILITY OF THE STAFF MEMBER TO ATTEND THE CLASS. THE
MANAGER IS RESPONSIBLE TO ENSURING THE STAFF MEMBER IS
GIVEN ALL RELEVANT INFORMATION TO ATTEND THE CLASS (DATES,
TIMES). Generally, the class is broken up into two - 4 hour sessions, given after
normal work hours in the afternoon. This class is taught by Eunshil and Blake.

Blake schedules the classes, ensures payment for attending, and presents staff
members with a certificate after completing the course.

Culinary Education Class - This class is designed to meet the USDA
requirements for all FNS staff for annual training. Class topics will vary each
year. The

Cyber Security Training - This is an annual training that all FNS employees
must complete. The training is held on-line, with each FNS employee logging in
and completing modules to improve cyber security. Each staff member should
complete these modules

Optional for Staff:

Career Ladder Class - This is a series of classes offered during the school year
for existing staff for professional development. The class is designed for FSA I’s,
who by their own initiative desire to improve their food service skills. It is
completely voluntary. Staff wanting to participate in the class must possess a
High School Diploma or GED equivalent, a satisfactory rating on their last
performance evaluation and have one year of food service experience. Topics
include, but are not limited to; customer service, food safety and sanitation, first
aid, etc.

The classes are generally, scheduled in the afternoons. There are five classes
and each class is two hours in length. There are tests on the material covered in
class. At the end of the classes the staff member must complete two workbooks.
Both tests and workbooks are graded and the staff member must pass both to be
promoted.

If the staff member completes the courses and required workbooks, they can
then be promoted from FSA I to a FSA II. Blake schedules and teaches all
classes.

Mandatory for New Manager Interns:

Intern Classes – This is a series of classes offered during the school year for
current manager interns. The classes are meant to continue in school training,
but in an atmosphere that is conducive to training and learning more complex
skills. A copy of intern classes will be provided to all interns. If any manager
would like to a copy of the schedule please ask Blake.

Any assistant manager hired that was not first a Manager Intern or did not
attend all classes will be required to attend all classes or finish remaining
classes. Any manager wishing to join the class may do so as well. Please let
Blake know you will be attending so we will have enough materials.

The classes are taught by district office staff.

Manager Training:

MPP/Baseline Workshops – This is a workshop designed to allow managers
to feel more comfortable using both programs as they were designed. The
workshops are designed to work with a small group in a one on one setting to
review basics of both programs. Also covered in the workshop is the YC Menu
website and Manager Resources. Managers, Assistant Managers and Manager
Interns are encouraged to attend at least one class offered during the course of
the school year. Managers and Assistant Managers can attend more than once,
however the same material will be taught at each class, so it may be more helpful
to ask for one on one help.

Blake schedules the classes, ensures payment for attending. The classes are
taught by Blake and Moss.

ServeSafe Certification Training – These trainings are schedule
periodically based on availability of trainers. These classes are designed to
review the ServeSafe book and provide the class attendees the materials to
complete, and pass the ServSafe test. The test is given at the end of the training
day. Managers, Assistant Managers, and Manager Interns are encouraged to
attend and maintain their ServSafe certification. These classes are open to staff
members if there are available seats, space is limited. Classes are usually held
on teacher workdays. All FNS employees are paid to attend.

Blake schedules the class, ensures payment for attending.

Leadership Academy – These trainings will require Managers and Assistant
Managers to focus on specific leadership skills and necessary attributes to
become high effective leaders of their staff. This training is done yearly with
each Manager and Assistant Manager attending the class once during the school
year. The training is conducted to help others understand their individual
strengths and weaknesses in managing people, and understanding the
difference between management and leadership.

Blake schedules the class, ensures payment for attending and coordinates the
teachers.

Department of Agriculture Sponsored Trainings - These trainings are
schedule periodically based on availability or needed topics. When these
trainings are available Blake will communicate the training opportunity, the
topic and logistics.

Career Ladder Classes

This is a series of classes offered during the school year for existing
staff for professional development. The classes are voluntary. Staff
wanting to participate in the class must possess a High School
Diploma or GED equivalent, an overall meets on their year-end
evaluation and have one year of FNS food service experience. If staff
complete the course then they are eligible for promotion to a FSA II.
Staff must attend all five classes. All classes are held in the FNS

training portable from 2:30 to 4:30pm.

Jamie Lovett - Food & Nutrition Coordinator

Responsible for the overall operation of one-third of the schools in the county and provides,

Individualized training for managers on how to read accountability reports and properly execute

Caron Rowe - Food & Nutrition Specialist I

Promotes and markets the FNS Program. Maintains the FNS Website. Provide technical assistance
to food service managers in the district. Implement improvements and necessary changes in food
preparation service, facilities, and equipment. Attend and assists with meetings of district personnel
in various matters. Maintain food service promotional programs and quality control. Assists with
staff, manager and intern training. Conducts food testing for new products.

Moss Crutchfield - Food & Nutrition Specialist I

Establishes, maintains, and updates procedures and objectives for the Your Choice school lunch
program. Assists with the design and implementation of signage, photography, publicity, and focus
group tests for the program. Maintains Your Choice Program overall progress, conducts walk-
throughs, coordinating with managers and their supervisors. Provides development and analysis
for recipes and writes menus, including production and costs, as well as training and support
services to location managers. Maintains the YC menu.com website. Works with the Food Buying
Group to evaluate and recommend new products for school Food Service.

Karla Ball - Food & Nutrition Specialist I

Provide additional assistance for Free and Reduced Applications, and Meal Planning and Production
process. Oversees all applications for National School Lunch Program, Supper, Fresh Fruit and
Vegetable Program, and Summer Food Service Program. Checks and balances for billing and
verification of financial data. Updates website as needed.

Mike Jones - Program Service Specialist

Responsible for meal claims. Responsible for Free and Reduced Application maintenance and
verification. Works with the Winsnap program and the Data Communication Manager to ensure
smooth operation at the school level. Assist with the FNS website and computer training for
personnel. Assist with budget and other financial issues.

orders, office supplies, answers questions on a variety of topics, looks up needed information and
assists with paperwork, time sheets, leaves, travel, work orders . Food and Nutrition personnel
payroll changes. Responsible for all uniforms, works with bids for small wares and large wares.
Maintains the Director’s calendar and arranges and organizes conferences and meetings.

Connie Herring – Administrative Assistant

Daily maintenance of the Meal Planning and Production process, assist with the Free and reduced
approval application process at the beginning of the SY and assist with the verification process as
needed. During the summer months assist with the summer records, updating manuals, records,
reports and forms. Maintain the filing for various positions in the office. Assist with the phone
answering and greeting at the front of the FNS office as well as the mailing out and preparation of
documents for the school sites. Maintains website updates for Health Inspections and processes
mileage forms.

Kelli Brew - Program Service Specialist (Farm to Schools)

Responsible for increasing the amount of locally-grown fruits and vegetables offered to Alachua
County students. Facilitates direct purchases from local farms and works with distributor to increase
their offerings of regional food. Co-coordinates “Farm to School to Work Hub” with Exceptional
Student Education Department. Works with community stakeholders as well as ESE department to
facilitate nutrition education, horticulture education, food processing and food service training.

Supports school gardens growing food for school kitchens. Oversees food safety training in food hub
and school gardens. Assists project development in grant-writing and reporting.

Leanna Tanner - Food Service Manager III (Catering Manager)

Oversee all catering operations. Develop catering menus, update costing for catered menus.
Maintain ordering and inventory cycles. Work with marketing and promotions specialist to promote
program and retain clients. Develop strategies for catering program. Fully execute presentation of
catered menu. Supervise staff for catered events, if needed.

Ed Caudle - Program Service Specialist

All general ledger postings, annual financial reports to DOE, financial management and budget
concerns, responsible for the entire Fundamentals system and keeping reports up-to-date and
accurate. Assists the Director with the budget and reviews revenue and expenses monthly. Reviews
revenue and expense reports monthly. Is the finance liaison between departments and other offices
regarding financial issues.

Catha Dixson - Senior Accountant

Responsible for purchasing (Bids/Specifications) supervision of orders, (monitoring of
food/supplies) vendor contacts, quality control, inventories of physical distribution and school sites,
(reviews levels monthly) pre-qualify food/supplies before bids and product testing. Supervises the
commodity allocations. Maintenance of food data base and food ordering system. Works with
WEBSCM and assists with purchasing SOP’s, works with annual benchmarks.

Joy Stokes - Junior Accountant

Responsible for extending and processing vendor invoices for all schools, deals with vendors
concerning accounts payable.

I have put together some reminders to help your equipment last longer. The reason that
I am asking you to leave your ovens open to, is to allow them to dry out after they cool
down.

1124 - ALCOHOL AND DRUG-FREE WORKPLACE

It is the intent of the Board to provide a drug-free workplace. The unlawful manufacture, distribution,
dispensing, possession, or use of a controlled substance or alcoholic beverage is prohibited in the
workplace. Violations of this policy may result in disciplinary action, up to and including termination.

Pursuant to the Drug-Free Workplace Act of 1988 and Board Policy 1139.02, Violation of Local, State, or
Federal Laws, employees shall abide by the terms of this policy and shall notify the Superintendent or
his/her designee of any arrest or conviction under a criminal drug statute not later than forty-eight (48)
hours after such arrest or conviction.

Employees are prohibited from engaging in the unlawful manufacture, distribution, dispensing,
possession, or use of a controlled substance and/or alcohol in the workplace. Violation of this prohibition
shall result in appropriate disciplinary action up to and including termination and referral for prosecution.
In job sensitive areas, such as transportation, illegal drug use or excessive alcohol use leading to criminal
action may be the basis for discipline.

"Workplace" is defined as the site for the performance of work done in connection with employment. This
includes any place where work for the Board is performed, including a school building or other school
premises, any vehicle owned by the Board or a vehicle used to transport students to and from school or
school activities, off school property during a school-sponsored activity, event, or function, such as a field
trip or athletic event, where students are under the jurisdiction of the Board.

A copy of the Board's drug-free workplace policy will be provided to employees upon initial employment.
Each employee will sign a statement to indicate receipt and understanding of the drug-free workplace
policy and that statement will be retained in the employee's personnel file. The drug-free workplace policy
may be posted at each worksite.

Pre-employment drug abuse screening examinations shall be required to prevent hiring individuals who
use drugs or individuals whose use of drugs indicates a potential for impaired or unsafe job performance
or for high risk positions such as bus drivers.

Employees in job classifications which require an annual physical will be required to submit to a drug
screening as part of the annual physical.

As a condition of continued employment, current employees shall submit to drug screening when
reasonable suspicion exists to believe that an employee is using a substance that is impairing the
employee and/or his/her job performance. Reasonable suspicion is:

A. aberrant or unusual behavior observed by the employee's worksite supervisor;
B. observed alcohol/drug use during working hours;
C. observation of physical symptoms commonly associated with substance abuse such as:

1. impairment of motor functions;
2. slurred speech;
3. incoherent or irrational mental state;
4. drowsiness;
5. smell of alcohol or marijuana;
6. extreme weight loss;
7. red eyes;
8. running nose or sniffing;
9. frequent or extreme mood changes;
10. lack of physical coordination;
11. frequent absences or lateness;
12. unexplained absence from assigned work;
13. deterioration in dress and/or grooming;
14. deterioration in work performance;
15. other marked, unexplained changes in personal behavior;

D. arrest of an employee for a drug or alcohol-related offense.

When a reasonable suspicion exists, the Superintendent's designee shall be contacted. The employee
will be provided an opportunity to explain his/her condition. The employee will be provided with
information regarding available drug counseling, rehabilitation, assistance program, and leave options.
One rehabilitation contract including drug testing may be agreed upon. Failure to participate in a
treatment program following a positive drug screening will result in disciplinary action, up to and including
termination. Due process will be followed.

All testing shall be conducted by a laboratory certified by the State of Florida as a medical and urine drug
testing forensic laboratory which complies with the Scientific and Technical Guidelines for Federal Drug
Testing Programs and the Standards for Certification of Laboratories engaged in drug abuse and mental
health administration of the U.S. Department of Health and Human Services.

The procedures established by the laboratory shall be followed in administering drug tests to employees.

Refusal to submit to drug testing when reasonable suspicion exists may result in disciplinary action up to
and including termination.

Employees who seek voluntary assistance for substance abuse may not be disciplined for seeking
assistance. Employees shall be subject to all employer rules, regulations, and job performance standards
with the understanding that an employee enrolled in a rehabilitation program is receiving treatment for an
illness.

Employees who return to work after completion of a rehabilitation program shall be subject to follow-up
drug testing with no advance notice. Any employee who refuses the drug test or subsequently tests
positive may be disciplined up to and including termination.

Random testing of employees shall not be conducted.

All drug testing, with the exception of employee requested tests, shall be at the expense of the Board.

Drug testing results will be treated in a confidential manner. Written notification of Board employees who
are in grant-funded positions and who are convicted of drug violations, will be made to Director, Grant
and Contracts Service, U.S. Department of Education, 400 Maryland Avenue, SW (Room 3124, GSA
Regional Office Building No. 3), Washington, D.C. 20202-4605.

Employees who hold a CDL license will be governed by Policy 4162, Drug and Alcohol Testing of CDL
License Holders and Other Employees who Perform Safety Sensitive Functions.
