Smoked Haddock and
Watercress Fishcakes

A family favourite – these fishcakes with zingy lemon, buttery smoked haddock and peppery
watercress have an extra healthy boost!

Serves: 4

Preparation time:
15 minutes
+ chilling time

Cooking time:
30 minutes

Ingredients: C
400g potatoes M
30g butter Y
500g smoked haddock C
1L milk M
85g watercress C
Zest of a lemon CM
2 spring onions, sliced K
2 tsp oil
flour to dust

Method:
Peel the potatoes and chop into
small chunks. Cook in boiling
water for approximately 10
minutes until tender. Drain then
add the butter, season and mash
roughly.

Meanwhile in a large deep frying combine all the ingredients then until they are browned and hot
pan, gently cook the fish in the shape into 8 fishcakes, using your to the centre. Serve with a salad
milk (in 2 batches if necessary) hands. Leave to chill in the fridge of fresh watercress.

There was tutoring, with short bursts of sketching
to promote spontaneity - resulting in a great deal
of light humour - besides longer periods of deep
concentration.  The model, Sarah, was a star!  Overall a
satisfying experience.  On 17 Sept is a workshop, with
an opportunity to renew subscriptions.  Tuesday 24
Sept will see a workshop with Sue Blackwell, who will
instruct on the intricacies of Illuminated Lettering.  Both
members and visitors will be welcomed.  7.30 pm to
9.30 pm at Brighouse Rest Centre.  Further information
